Japanese Wagyu isn’t a marketing word — it’s the result of a specific breed, a grain-rich diet, and a patience refined in Japan over a century. Here’s what goes into every cut we supply.
The overwhelming majority of authentic Japanese Wagyu comes from the Japanese Black breed — one of just four native Wagyu breeds, and the one prized worldwide for fine, even intramuscular marbling. Every animal is pedigree-registered from birth.
Cattle are raised in small herds in low-stress environments, with feeding and handling tailored to each animal. Stress and rough handling degrade meat quality, so the whole approach is built around keeping the animals calm, clean, and healthy throughout their life.
From around 11 months, the cattle move onto a high-energy diet of rice straw, corn, barley, and wheat or rice bran, fed two to three times a day. The share of grain concentrate climbs from roughly a third of the diet to over 80% in the final months — the slow build that creates the marbling.
Where commercial beef is typically harvested around 18–22 months, Wagyu is raised to about 28–30 months — roughly twice as long. That extra year of careful feeding is the single biggest reason Wagyu marbles the way it does.

Every animal carries a 10-digit individual ID, registered at birth with its date of birth, parentage, and farm. Any cut can be traced back to the exact animal — its origin, its history, and its grade.
At slaughter, an independent body — the Japan Meat Grading Association — grades each carcass on marbling, colour, firmness, and fat quality, producing the familiar A5 yield-and-quality grade and the BMS 1–12 marbling scale you see on our catalog.
